A well sherried and complex dram, that offers up classic Glenlivet notes of apple, honey and malt, alongside oakier flavours of raisins, plums, nuts, dark chocolate, cinnamon, nutmeg, orange rind, cloves vanilla and slight leather. An excellent example of the famous distillery’s spirit.

  • Matured for 13 years in a first fill sherry butt, The Glenlivet 2007 Signatory Vintage is bottled in the “The Un-Chillfiltered Collection” range, giving consumers a richer flavour profile. The result is a well sherried and complex dram, that offers up classic Glenlivet notes of apple, honey and malt, alongside oakier flavours of raisins, plums, nuts, dark chocolate, cinnamon, nutmeg, orange rind, cloves vanilla and slight leather. Bottled at 46% ABV and without coloration or chill-filtration (of course), this is an excellent example of the famous distillery’s spirit.

    Glenlivet is known to be Speyside's first legal distillery, founded in 1824 by George Smith after years of underground activity. The Livet Valley in Speyside was a haven for underground distillers. Unable to meet growing demand, Smith moved the distillery further down the valley in 1855 to increase production. The name of Glenlivet not being protected, many neighboring distilleries used it happily, taking advantage of the influence of the original. It was George Smith Grant, George's grandson, who in 1881 instituted legal proceedings to prosecute those he deemed to be usurpers. The lawsuit was long and concluded that the Smith's distillery could in future be called 'The Glenlivet' and that other distilleries could add to their own name that of 'Glenlivet'.

    Mainly matured in ex-bourbon casks, The Glenlivet has a fresh and spring-like character marked by citrus and floral notes. Bottlings aged entirely in sherry casks can only be found through independent bottlers such as this Signature Vintage. Today, The Glenlivet is the # 1 selling single malt in the United States and # 2 worldwide.

  • Signatory was founded in 1988 by Andrew and Brian Symington and is best known for their Signatory Vintage Scotch Whisky independent bottlings including their Cask Strength and Un-Chill Filtered collections. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold, though long before any suitable signee could be found. With the initial plan to have all their bottles signed by the great and the good long since abandoned, Signatory went on to become one of the largest and most respected independent whisky bottlers.

    Signatory currently bottle at three strengths: 43%, 46% Un-chill filtered (UCF) and Cask Strength. To add proof of authenticity to their cask strength bottlings, Signatory always include the cask numbers, date of distillation, date of bottling and number of bottles produced. Signatory Vintage’s aim is to offer as wide a range of whiskies as possible, some of which are not even bottled by the proprietary distillery. This allows malt enthusiast to sample the huge variety of subtle differences which occur between casks.
